Westfield Chefs Share Holiday Dinner Recipes

Dazzle guests with a new dish this year.

Chefs from Westfield's Chez Catherine and San Marzano Pasta Bar have shared festive holiday recipes that are sure to delight seafood lovers. Sea Scallops Grenobloise For the Scallops 12 Large Sea Scallops salt white pepper 3 tbsp olive oil For the sauce 1 qt of stock, vegetable or chicken 1 cup of white wine or champagne (optional) 1 cup of chopped mushrooms 1 smal shallot, finely diced 100g flour 100g butter 1/2qt of cream salt, pepper, blade mace, star anise To make the sauce: Sweat the shallot, mushrooms in a 3qt stock pot or sauce pan over low heat, deglaze with the wine (optional) add the stock, bring to a boil and reduce to a simmer. In a 5 qt stock pot or sauce pan, melt the butter, once it has completely melted, whisk in the flour …

San Marzano Adds Free Delivery to Menu

South Avenue eatery offers Roman-style pizza.

Known for its authentic pastas and Roman-style pizza, or pizza al taglio, San Marzano is adding something new to its menu starting Monday, Dec. 10: free delivery. San Marzano hails its pizzas as "slow fast food." It's all about the dough. The dough is nurtured lovingly by chef Joseph Petracca, for a minimum of 72 long, laborious hours before baking. It's kept at specially controlled temperatures, and is turned and folded at regular intervals as it bubbles and billows over the 72-hour wait prior to baking. And should one of these specially controlled conditions vary in the slightest, the whole thing could all go out the window.  First impressions might not blow you away. San Marzano Pasta Bar Offers Slice of Italy on South Ave.

Brothers-in-law Joseph Petracca and Maurizio Minniti are looking forward to an official grand opening in mid-May.

San Marzano Pasta Bar, located at 339 South Ave., is enjoying a soft opening this week before celebrating its official grand opening on May 18.  The eatery is named for the San Marzano tomatoes, imported from Italy, that co-owner Joseph Petracca said are the secret to his brother-in-law and business partner chef Maurizio Minniti's sauce. "There's no sugar in it, no preservatives," Petracca said. "Everything is made fresh. Nothing is frozen."  All the pasta is homemade by Minniti as well. The chef, who has owned two restaurants previously, one in England and one in Italy, most recently worked with Mario Batali. Petracca, who serves as the resident pizza purveyor, trained in Rome for three months to perfect his dough, which he allows to rise…

New Eateries Spring Up in Downtown Westfield

From burgers to fresh pasta and yes, more frozen yogurt, new offerings abound.

New businesses are popping up all around downtown Westfield this spring.  Carnivores can make tracks to the Westfield train station as Burger Palace plans its grand opening on Monday, April 16. Located at 251 North Ave. the space was formerly home to 25 Burgers. Burger Palace will offer a choice of a full or continental breakfast starting at 7 a.m. Lunch and dinner, featuring take-out grab-and-go options, will also be available. In addition to its fresh western beef offerings, which will include the California burger and a bacon cheeseburger, Burger Palace will serve up cheese steaks as well as grilled subs.
